There is nothing I love more than a fabulous trip to Chapman’s Market here in Windsor, CO.  He has farmed his whole life and has the most beautiful produce I have ever seen.  This week’s fun finds are the lemon cucumbers.  They are absolutely divine!  They have a mild sweet flavor and a cool, crisp texture.

I also was lucky to come across Calabacita squash.  They are firmer than most types of squash, but they are sweeter and more flavorful!  I cannot wait to put them on the grill.  Other items pictured are cucumbers, red and yellow onions, peppers, and Roma and cherry tomatoes.  Enjoy!
